Cyprus Recipe - Recipe Cypriot Tzatziki Dip
Favourite Greek appetizer and key ingredient in many dishes. Try it as a dip
with fresh crusty bread or warm pita points.
The Greeks use this as an appetite stimulator - and it really works. Best made
with a thick European style yogurt. If you cannot obtain this yogurt easily, you
can recreate it by placing the yogurt in a cheese cloth suspended over a bowl.
You will see "yogurt bags" suspended from the ceiling in the kitchens of Greek
villages, draining out the excess liquid in preparation for this dish.
1/2 cucumber
2 1/2 cups yogurt
3 cloves garlic, peeled and minced fine.
1 Tbs Extra Virgin Olive oil
In a serving bowl, mix the yogurt and garlic.
Peel and coarsely grate the cucumber - squeeze out most of the liquid. Add
the cucumber to the yogurt mixture and mix in well. Finally add the olive oil
and stir to completely blend. Cover and allow to sit in the refrigerator for
several hours, or even overnight, for the best flavor. Serve chilled.
